Good Morning, Sunshine!


My baby Judah is 6 months old and we have slowly started dabbling in solid food. So far he seems to enjoy food off my plate more than the watery stuff in jars so I have been looking for ways to use the baby food I have sitting around. I dug around online, found some muffin recipes and then modified them to get what I wanted. This morning I made Oatmeal Muffins with Sweet Potatoes and Squash and they were yummy. I was going to use part whole wheat flour but those pesky pantry moths had turned my bag of King Arthur into a baby moth nursery so I had to use all white flour. I think you could use just about any single fruit/veggie or combonation and these would be equally good. Tomorrow we're going to try them with carrots. I don't have picky kids and they're used to me putting veggies in muffins but I bet even picky kids would like these.


Oatmeal Muffins with Sweet Potatoes and Squash

1 cup of all purpose flour 3/4 cup rolled oats3/4 cup brown sugar
3 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp pumpkin pie spice
1/2 stick butter, melted
1/2 tsp vanilla
1 egg
2 4oz jars baby food puree, I used one sweet potato and one squash

Preheat oven to 350, grease muffin tin or use papers. Mix dry ingredients then gently stir in wet ingredients just until moistened. Fill muffin tins and bake at for 15-18 minutes. Makes 12.
